Executive Chef Jack has thoughtfully curated each course to reflect both authenticity and innovation. The menu highlights traditional Irish ingredients while adding the Fire & Ice touch.
Colcannon Potato Leek Soup with Smoked Sea Salt & Kale Crisp
We begin with a warm nod to tradition. Colcannon, a classic Irish combination of potatoes and greens, is reimagined as a silky potato leek soup. Slow-simmered leeks bring gentle sweetness, while the creamy potato base creates comforting depth. Finished with smoked sea salt for subtle complexity and topped with a crisp of kale for texture.
Sautéed Dublin Bay Prawns with Jameson Irish Whiskey, Morel Mushrooms, Light Cream & Steamed Rice
Ireland’s coastal influence shines here. Tender prawns are sautéed to highlight their natural sweetness, then lightly finished with Jameson Irish whiskey to add warmth and depth without overpowering the dish. Earthy morel mushrooms balance the richness, while a delicate cream sauce ties everything together. Served over steamed rice, this course offers subtle richness without overpowering the palate.
Herb-Encrusted Rack of Lamb with Murphy’s Irish Stout Jus
A centerpiece worthy of the occasion. Our rack of lamb is coated in a fragrant herb crust and roasted to enhance its natural tenderness. The accompanying Murphy’s Irish Stout jus delivers deep, malty notes with subtle bitterness that perfectly complements the richness of the lamb. This course is a true celebration of Ireland’s love for hearty, rustic flavors elevated through precise preparation.
Guinness-Braised Beef Short Rib with Grilled Heirloom Carrots

Bailey’s Chocolate Mousse with Irish Whiskey Caramel & Oat Crumble
